Okay, I know I don’t normally post recipes, but we can call this a case of new year new content. For the record I do enjoy cooking but with certain recipes I have what could be considered a ‘what the heck!’ attitude so recipes don’t always taste exactly the same the next time i cook them.
Anyway, in a large pot for the base of the soup I fried one diced onion, two diced chilis and some diced garlic in some butter. I then added a ham bone and two beef soup bones and about 2.6 litres of water (you don’t have to use that much water. But if you do use that much water, the soup tastes better if you take the time to reduce the amount of liquid you have in the pot, then be sure to add any extra beef soup bones that you might have. Reducing your soup can be done faster by using the Range hood above your stove, just be sure you keep an eye on your soup so you don’t boil off all the liquid). I then added frozen peas and frozen corn and some leftover chopped onions I had cooked in white wine (the wine you use shouldn’t cost more then $5 – $6, just be sure to taste the wine before you cook with it and if you don’t like the taste don’t cook with it).
Remove the bones out of the soup and cut off as much of the meat as you can and then add the meat back into the soup. Then blend the soup to your desired consistency.
